Raised in a large Italian family where food was an integral part of life, Adriano Marinelli spent years in the kitchen learning the secrets of traditional Italian cooking alongside his mother.
He never imagined he would one day apply these techniques toward a career in the food industry. Instead, he joined the family business, woodworking and manufacturing – a career path that ultimately led to bankruptcy.
During his time as a manufacturer, Adriano and his partner Lisa jarred the pasta sauce he remembered from his childhood, and gifted it to friends and family during the holidays. As requests continued to pour in for Adriano’s homemade Italian sauce, the couple’s on-going joke to bring their product to store shelves quickly developed into a promising business opportunity.
A Recipe for Success
In 2001, with less than $250 in his pocket Adriano took over a non-operational bottling line and, rebuffing plans to turn the plant’s machinery into scrap, he completely refurbished the parts by hand thanks to his background in manufacturing. With the machines functioning, Adriano 3 days later started making small batches of what would one day become a premium pasta sauce.
Insisting on using only the best premium California tomatoes, Marinelli’s hand-select their produce based on color, aroma, sweetness and acidity. Since quality control is critical to the brand, only three out of ten tomatoes in the field prove suitable for Marinelli’s. To preserve the sweetness of the tomatoes, Marinelli’s tomatoes are fresh packed within 4-6 hours of being harvested.
Price of Perfection
Maintaining the integrity of the sauce, Marinelli’s True is made in small batches of 950 jars at a time, each one free of additives, sweeteners and preservatives. Like its tomatoes, Marinelli’s employs the same high standards with all ingredients, using only the freshest products – no dehydrated powders or spices. Onions are peeled, diced, then sautéed in fresh oil, all by hand, allowing for zero oxidation and complete aroma preservation; whole, non-peeled garlic in its original skin is processed and peeled by hand, in-house. A secret process that is seven years in the making virtually eliminates the oxidation of the garlic and, similar to the onions, preserves the depth of flavor. The company even roasts and grinds its own black pepper within the facility.
Marinelli’s True Italian Pasta Sauce is hot-filled when bottled, then individually housed in a UV protected eco-friendly carton for maximum light protection to preserve freshness. True to its artisan approach, each bottle is labeled with the particular batch number, best before date, and bottle number, so customers can appreciate the small-batch process.
Seals of Approval
